There are a lot of reasons meat can turn brown - you can find the USDA page on it here.
We don't blame you if cooking brown meat makes you nervous. There are many reasons meat can turn brown. Most often than not, those changes have to do with oxidation, which is entirely natural and has little to no effect on the quality! This product should bloom red as soon as it is out of the package through exposure to oxygen. The only problem will be if a foul odor accompanies it or if it feels slimy or tacky to the touch. These would indicate spoiled meat, and if you find that's the case when you open the packaging, please let us know, and we'll make it right.
