The best way to thaw frozen meat is by leaving it overnight in the fridge, still in the packaging.
Another convenient technique if you're in a hurry is to submerge the meat (still in it's vacuum-sealed packaging) in a bowl of lukewarm water and leave a trickle of lukewarm water running over it for 10 to 20 minutes, which allows for an even thaw.
